Hunger can lead to desperation… and grumpiness. It’s a proven fact. I had to think fast one afternoon when hunger pains struck and I hadn’t gone grocery shopping yet! All I had in the fridge was leftover rotisserie chicken. And spinach. Luckily 1 + 1 didn’t turn out to be such a bad combo. Add some olive oil, seasoning, and chunks of vine ripe tomato and you get a pretty filling meal.
Here are the ingredients I used:
- Leftover rotisserie chicken, cut into smaller pieces
- 1-2 tbsp. olive oil
- 2-3 cups of fresh spinach leaves
- 1 vine ripe tomato, diced into 1 in. chunks
- Salt, pepper, garlic and/or onion powder to taste
I heated the olive oil in a skillet over medium heat and added the chicken pieces. After a minute or two, lower the heat to medium-low and slowly add the spinach leaves, allowing them to wilt a little before adding more. Lastly, I added the tomatoes and combined seasoning. Stir and cook about 3-5 minutes until all ingredients are warmed through. Quick and easy meal; about 10 minutes from start to finish.
